Even though my emotions are telling me I want a big ole bowl right now, some things are just better if you have to wait on them. And this is one of those dishes.

Although it is a slow cooker recipe, it will be ready in less than four hours, so a perfect lunch time dish on the weekend (or week day). I’m thinking perfect dish for the kids in the summertime for lunch.

I love switching up the basic flavor. Sometimes I make it using cheddar cheese or gouda or even pepper jack cheese to stimulate the tastebuds and conversation: ‘Man, are you sure this is mac and cheese?’ ‘ or ‘Wow, a little spicy tonight huh?’ ‘Man, what is this flavor, it tastes a little strong, but I LIKE it!   • 8 oz gluten free macaroni
  • 3 cups shredded cheddar cheese

  3. Add cheese and macaroni to slow cooker.
  4. Stir gently to combine.

  6. Reduce heat to low and cook for 3 hours.
